Made from local Sicilian grape varieties, this wine is light and fresh and full of flavour. It tastes of red summer fruits and spicy black pepper. The wine has a aromas and flavours of jammy red fruits, summer herbs, and a touch of violet. On the palate it is rich and refreshing.
The grapes are carefully handpicked, gently destemmed and macerated. The grape must is fermented in stainless steel tanks at a controlled temperature of 25°C for 15-20 days. Malolactic fermentation also occurs. The wine is then aged for 8 months (a third in oak casks and two thirds in stainless steel tanks) and is finally aged in bottle for 4 months before release.
